Taking full advantage of the wild yeast of the Funk Q cellar, mad scientist Ralph Quillin has cranked out another killer sour. Granny Smith apples, tart grape, and an acetic acid kick hit the nose early on. With warmth, a definite caramel note appears with traces of oak. On the tongue, it's all about the pucker, as tart fruits strip at taste buds. An oaked, vinous grape juice weaves into a slight malt sweetness that just can't overcome the acidic punch. And that's what makes it so good. Not for the sour beer rookie, but if you're feeling adventurous, this is currently on tap in Lexington at Hopcat.
