Year of New Beer: Filo Dreams, Barrel Theory Beer Company (MN)

Every now and then, I open something by myself and I know immediately that it was a mistake. Not because it isn't any good, but rather it's too good to be enjoyed alone. Tonight, I screwed up. Pouring like motor oil, this one gives the olfactory nerve a workout. Initially very roasty, with a char that's highlighted by an earthy, nutty layer, all of which is quickly usurped by layers of cinnamon, chocolate, and honey. It's a real treat when the aroma of a beer transitions fully to the tongue, which this does. Rich and malty, the cinnamon is utilized with a deft hand, allowing the more subtle tones of the baklava to stand out. Honey, walnuts, and flaky pastry all take a turn in the spotlight. Thick and sweet with just the right amount of roasty malt for balance. A lot of these dessert beers can come off a bit gimmicky, but this is well executed. Absolutely stellar.
